The Brewery Cheese is a fine-aromatic hard-cheese. A specialty from the best silage-free milk producers of the Bregenzerwald. During the aging period of the cheese, the caregiving requires time-consuming manual work. Only during this process, the cheese develops its mild flavor and smooth texture.

FARMER’S CHEESE

A delicate, smooth cheese batter – uniform, hazelnut-sized holes and a nut-like core flavor – that’s how the Farmer’s Cheese can be described best. It is the ideal breakfast and snack cheese, perfect for cheese plates and with its excellent melting behavior and the natural rind also well suited to gratinate and brown.

MOUNTAIN CHEESE

The spicy herbs of the Alps and valleys flow along with the healthy Bregenzerwälder hay milk into the delicious Mountain Cheese of the Bregenzerwald. Silage-free means that the cows are fed exclusively with fresh grasses and herbs from our Alpine patures. During winter time the cattle is fed with air-dried hay from the region.

The Hay-Milk Cheese is a tasteful, very semi-soft cheese and well known for its creamy texture and its delicate flavor. Therefore, this type of cheese is an ideal candidate for many occasions. Special herbs and the unique grass flora from pastures over 700 meters above sea level give the delicately melting Dairy Cheese its fine piquancy. The cheese is particularly suitable for raclette (molten cheese) or a savoury snack.
